今年は花時期の天候に恵まれ、ブドウの結実はすこぶる良好、またシーズンを通して積算温度も高かったためこれまでで１番の豊作でした。夏に夜温の下がらない日が続き、アントシアニンの生成がうまくいかず、糖度は上がっているのにブドウの色が乗らないという状況で収穫時期を迷いました。最終的に少し青玉も混ざった状態での収穫となりましたが、絞ってみると全体でとても糖酸バランスの取れたキュベとなりました。今年は貴腐果がほとんどなかったため、爽やかなリンゴの香りにすっきりドライな後味で王道の仕上がりです。熟成にはフランソワフレールの4年目樽、2次発酵にはシャンパーニュ酵母を使用しています。上品できめ細かな泡がしっかりと出ており、食前酒としても食中酒としても万能なスパークリングワインに仕上がりました。※抜栓時に吹きこぼれないように、オリを沈め、よく冷やしてからお楽しみください。
